Skinny Spiced Coconut Yogurt Quinoa Muffins

Muffins are really the easiest breakfast or snack that you can make. For this recipe mix all the ingredients together - ½ cup mashed banana, ½ cup applesauce, ½ cup coconut yogurt, ¼ cup maple syrup, 1 ¼ cup oat flour, ½ cup quinoa flakes, ½ cup almond flour, 1/4 cup coconut sugar, 2 teaspoons baking powder, cinnamon, nutmeg, vanilla extract and salt. Preheat the oven to 190 degrees and bake for 22-26 minutes.

Banana Zucchini Oatmeal Cups

Not only muffins are so easy to make! With this recipe mix all the ingredients together in a big bowl - 2 tbsp ground flaxseed or chia seeds, 6 tbsp water (alternatively, you can use 2 eggs), ¼ cup almond butter (or peanut butter), ¼ cup pure maple syrup, 3 bananas, 2 zucchinis, ½ cup milk, 3 cups of oats, 1 tbsp baking powder, 1 tsp cinnamon, little bit of salt and vanilla extract. Preheat oven to 190 and bake for 22-25 minutes.

These baked oatmeal cups are lightly sweetened with a touch of pure maple syrup and ripe banana, so don’t expect them to taste like chocolate cake. If you’ re more adventurous you can add dried fruit, nuts or chocolate chips. But this is healthy breakfast, people! And what about the green thingies lurking from the oatmeal cups? Well, that will be zucchini which will give you your daily dose of green, a bit of fiber, and also some added moisture that allows the batter to be totally oil-free!

5 Minute Spinach And Cheddar Microwave Quiche In A Mug

This recipe will not only be super delicious but also quick so pay attention now! You will need a medium sized mug that can go into the microwave and all these following ingredients - ½ cup chopped spinach, 1 egg, ⅓ cup milk, ⅓ cup shredded cheddar cheese, chopped baked bacon, salt and pepper to taste. This quiche takes only five minutes to make, and is a high protein, veggie-packed breakfast to kickstart your day! No more excuses for not eating breakfast.

Mini Ham and Cheese Quinoa Cups

You will need 2 cups cooked quinoa, 2 eggs, 2 egg whites, 1 cup shredded zucchini, 1 cup shredded cheddar cheese, 1/2 cup diced ham, 1/4 cup chopped parsley, 2 Tablespoons shredded parmesan, 2 green chopped onions and salt & pepper. Then, preheat oven to 350 degrees. Combine all ingredients in a large bowl. Fill in each cup and bake for 15-20 minutes, or until the edges of the cups are golden brown. Let cool for at least 5 minutes before removing from the mini muffin tin.

Bonus: Vegan Blueberry Flax Breakfast Muffins

For this bonus recipe, we found something for vegans too, so you can still enjoy a little dessert or delicious breakfast. Let’s see the ingredients. 2 cups oat flour, ¼ cup ground flax, 2 teaspoons baking powder, salt, vanilla extract, 4 tablespoons coconut oil, 1 cup almond or soy milk + 1 teaspoon vinegar, ½ cup apple sauce or ½ mashed banana, 1 cup brown sugar and frozen blueberries.

Preheat oven to 190 degrees. In a cup combine almond milk and vinegar. In a large bowl, combine flour, flax seed, baking powder, salt, and cinnamon. Mix together well. Add apple sauce, melted coconut oil, sugar and/or maple syrup, almond milk + vinegar mixture to bowl with flour. Mix until combined. Fold in blueberries. Put the dough into the tray and place into the oven for 25-35 minutes until puffed, golden brown. Enjoy!
